Vinsanto is produced from the white grape varieties Trebbiano and Malvasia, along with a small amount of red Canaiolo grapes, all naturally dried in a well-ventilated environment, During the drying process, the grapes are inspected and any spoiled berries are removed. Around February, when the grapes reach a sugar level of about 32ยฐโ36ยฐ Brix, they are pressed and transferred into small 55-liter barrels (caratelli) where they ferment with the aid of spontaneous yeasts. The vinsanto ages in these barrels for about 8 years, with minimal topping up before bottling. Bottle size: 0.375 liters.
