Description

Vinsanto is produced from the white grape varieties Trebbiano and Malvasia, along with a small amount of red Canaiolo grapes, all naturally dried in a well-ventilated environment, During the drying process, the grapes are inspected and any spoiled berries are removed. Around February, when the grapes reach a sugar level of about 32ยฐโ€“36ยฐ Brix, they are pressed and transferred into small 55-liter barrels (caratelli) where they ferment with the aid of spontaneous yeasts. The vinsanto ages in these barrels for about 8 years, with minimal topping up before bottling. Bottle size: 0.375 liters.

The wine has an amber color with an intense resinous aroma of dried apricots. It is fruity to the taste and velvety on the palate, with a balanced sweetness that is well integrated with the alcohol and acidity.
Vin Santo is best enjoyed with foie gras, aged cheeses, or even better, as a wine for contemplation.
