In the morphology of the slopes of Villa Calcinaia, particularly cold small valleys open up between the folds. This is where the Sangiovese grapes come from, harvested at aromatic maturity while still young. Only the free-run must is extracted from the whole bunches, resulting in yields well below the typical level for this type.
