In the morphology of the slopes of Villa Calcinaia, particularly cold small valleys open up between the folds. From these come the Sangiovese grapes, harvested when the aromatic maturity is still fresh and youthful. From the pressing of whole clusters, only the free-run juice is kept, stopping well short of the typical yield for this varietal.
